Ingredients

  • 1 cup orange juice with lots of pulp, or more as needed
  • 3 ripe, sweet apples, such as Red Delicious
  • One 8-ounce can crushed pineapple
  • 1/2 cup frozen grated coconut, thawed
  • 1/4 cup sugar

Directions

Pour the orange juice into a medium bowl. Peel and core the apples, and then grate them into the orange juice using the large-hole side of the grater. Add the pineapple, coconut and sugar. Mix well, adding more orange juice if the mixture is not juicy enough. Store in the refrigerator until ready to serve. The apples will continue to absorb juice, and orange juice can be added as needed to keep it as juicy as you like.

    Absolutely amazing! Used the same amount of orange juice and apples. But changed the rest up by using a 20 oz can of crushed pineapple in 100% juice and almost a whole bag of flaked coconut. It was very sweet and yummy and didn't need any extra sugar at all. I will definitely be making this again!

    This was superb!!! I added a banana and 1 packet of monk fruit in the raw instead of the sugar and it was good but not to sweet. Will make this again!!!

    Super easy, super refreshing and super delicious! I used pink lady apples and sweetened coconut so I didn't add any sugar. I didn't have any orange juice so instead I added lime mango juice that I had on hand. It tasted very tropical and oh so yummy. I will definitely make this again.
