Grilled Cheese

  • Dijon mustard
  • Eight 1/2-thick slices country-style white bread
  • 12 ounces farmhouse Cheddar, sliced
  • 12 slices bacon, cooked to desired doneness
  • 1 green apple, thinly sliced
  • 3 tablespoons unsalted butter

Heat a griddle or large skillet over medium-low heat. Alternatively, you can use a panini press if you have one.

Generously spread the Dijon on 4 slices of bread. Top each slice with some of the Cheddar, 3 pieces of bacon, some apple and additional Cheddar. Place a slice of the remaining bread on top of each sandwich and spread with the butter. Place a sandwich on the skillet buttered-side down and butter the remaining side. Cook until the cheese is slightly melted and the bread is browned. Flip the sandwich and continue to cook until the cheese is thoroughly melted and the sandwich is golden brown. Repeat with the remaining sandwiches.

    both me and my hubby loved these sandwiched, very refreshing and yummy. I personally didn't care for the bacon in it for some reason (and I love bacon but the combination of apples, cheese and mustard was just fantastic. yum yums. I also made them with potato bread and they came out super good.
    The kids request this one all the time. It is a great taste combo. To mix it up, I have tried different breads, but keep everything else the same.
    Really great flavor combo and so simple to make, Felt like I was eating a sandwich from a bistro at my dining room table and the best part is I made it!
    You can't go wrong with this "Tylerized" sandwich. You've got to try it.

    This is a great grilled cheese sandwich. This time I used ciabatta bread, broiled it open face for just a minute and it was delicious. great flavors.
    My husband enjoyed this sandwich & I'll make it again. I used center cut bacon (4 pieces each sandwich, 2 slices of medium cheddar, and Granny Smith apple. My apple was really, really tart, which detracted a bit. I'll use some other type of apple next time.
    My roommate and I were amazed at the wonderful flavors of this recipe! I used one slice of cheddar and one slice of gouda (it is one of my favorites and this was a huge hit! Great recipe again tyler! Thanks!

    OMG! The best grilled cheese ever. I used sourdough bread slices and everything else same as recipe. I have made it using both medium and sharp cheddar and both were awesome. May try a mixed cheese next time for hubby. He likes swiss so maybe will substitute a slice of swiss and 2 slices of cheddar. Have had a plain mix cheese grilled and its good so we will see. I love all of these ingredients so putting them together made them even better! Great sandwich for company! Thanks Tyler!
    Was expecting a bit more. I like the bacon/apple/cheese combo, but the bacon just added too much fatty flavor to the already dense grilled cheese. If I use this recipe again, I'll do just cheddar and apple.
    This is a cool combination and so obvious, I never thought of it. I made the sandwich as written and the apples stayed crisp, the mustard added just the right amount of a savory flavor and there's nothing like grilled cheese! A few days later, I made the sandwich again with cinnamon raisin bread. I sauteed paper thin slices of a whole honeycrisp apple (cut on a small mandolin) in a Tablespoon of unsalted butter and half teaspoon honey. I used the the dijon mustard on one and not the other; of course without the mustard it cut the sweetness. Both family and friends who were around when I made them, thought they were a hit either way.
    I love cheddar, bacon and apples, but was a little apprehensive about the addition of mustard to this sandwich (I'm really not a mustard person. But, being the culinary adventurer I am, I tried it. And it was SO totally worth it. 
    This sandwich is wonderful- the bacon is salty, the cheese is gooey, the apple is sweet, and the mustard brings out the best in both the apple and the cheese, making them work wonderfully together. Besides the taste, the texture is also fabulous. The apple has just enough crunch to counter the cheese, and the sandwich stays together perfectly- no falling apart! 
    I would totally recommend it- it's easy and delicious!  
    My favorite grilled cheese sandwich EVER! I usually make this version when craving a grilled cheese but I must admit, I made 1 small change and use prosciutto instead of bacon but it's really good either way. One night I had a couple of friends over and did an unexpected dinner with this recipe and one couldn't believe how simple and delicious it was; she really liked the mustard in it. I would recommend cooking the apples a bit before if you prefer them softer since they don't really get soft.

    This is the best grilled cheese EVER! My husband and I love it. It is our favorite way to have grilled cheese! The apples, bacon, dijon mustard and white cheddar combine into such a wonderful flavor combination. If you have never have these you are missing out.

    This is a great play on a old favorite. I used a SHARP aged white cheddar and I cooked the bacon until it was crispy. Also, I think the granny smith paired well with everything. Ummmmmm. Wont be eating this often due to the calorie count but it's a good thing to have on a blistery cold day with some warm soup.
    Very delicious sandwich, everyone loved it - served with the Hunter's Minestrone. Next time I think I will chill the apples first, I used room temp apples and they turned a little limp after cooking in the sandwich and I think it would be better if they stayed crisp. A definite splurg due to the high fat content but oh so yummy!
    The sharpness of the cheddar plays perfectly with the other ingredients. The natural sweetness of the apple compliments the little kick of the dijon mustard. Just be careful not to add too much dijon, could overpower the bacon. Also, i used "country cured" triple smoked bacon from my local butcher shop which worked very well with all of the different flavors.
    I've always made grilled cheese with mustard, so that wasn't a new combo for us, but with the apples and bacon - wow! Great flavor combination. I used Granny Smith apples and Tillamook cheddar (not sure if Tillamook is available anywhere but the West Coast). I thought the apples were just a little too tart, so next time I'm going with Fuji and pepper bacon. Really looking forward to that combination too.

    I was really excited to make this, the only change I made was using american cheese because it was all I had, but I think the apples could be left off it didnt really go to well with the cheese but the mustard was a plus I think Im going to continue using it from now on. I know the flavors sound off but you should at least try it once, maybe you might like it with apples

    This recipe was awesome and my kids and I loved it. I tried it with the mustard and without, and without was better hands down.
    Loved this new way to try grilled cheese. My boyfriend likes things pretty simple so he didn't care for the apples on the sandwich. I love the apple/cheese combo though. I bought plain bacon put it on a baking sheet lined with foil and seasoned with salt, pepper and a little bit of steak seasoning. Cooked at 400 degrees for 15 minutes, it was PERFECT. Not too crunchy for the sandwich. Will definitely make this sandwich again, and will probably always make bacon that way from now on.
