Ingredients

  • 1 egg yolk*
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon minced garlic
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon Dijon mustard
  • 2 anchovy fillets, mashed
  • Scant 1 cup vegetable oil
  • 1/3 cup extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 1 large head romaine lettuce, cleaned and cut into 1 to 2-inch pieces
  • Freshly grated Parmesan
  • 2 cups croutons

Directions

In a medium bowl, whisk together the egg yolk, lemon juice, garlic, Worcestershire, pepper flakes, mustard, and anchovies. Slowly whisk in the oils to emulsify. Season, to taste, with salt and pepper.

Place the lettuce in a large bowl. Sprinkle with Parmesan and black pepper. Drizzle with desired amount of dressing and toss well. Sprinkle top with croutons.

    A perfect recipe!!! Follow the recipe and you can't go wrong, it may sound like a lot of oil but trust me it comes out perfect every time. I don't add the pepper flakes but this is so easy to reproduce the same great taste time after time!!!

    Finally, the PERFECT Cesar dressing! I've been on the hunt for nearly a year trying dozens of cesar dressing recipes. I saw this one and figured I would give it a try ( I did eliminate the red pepper since I have small kiddos. So imagine my surprise when I took the first bite and nearly jumped up in excitement. Some people may think this is nuts, but finding the perfect cesar is not easy. My hubby and two picky kiddos loved it too. It was the first time my kids asked for MORE salad -- now that's a compliment!

    I'm not an experienced cook at all, but I've made this salad 3 times and each time it was amazing! Even better dressing than the kind you get in a restaurant. I highly recommend this.
