Almond Butter Green Bean Sabzi

Yes, you can do more with almond butter than spread it onto toast. Here, the nut butter makes for a hearty sauce that beautifully soaks in the flavor of the spices and gives the green beans a rich coating. This is a hearty side that can also become a full meal—just add rice, paratha or roti.

Ingredients

2 tablespoons neutral oil, such as canola or vegetable oil

1 pound green beans, trimmed 

Kosher salt and freshly ground black pepper   

1 tablespoon freshly ground coriander seeds 

1 clove garlic, minced 

3 tablespoons creamy unsalted almond butter 

1 tablespoon lemon juice  

Cooked rice, paratha or roti, for serving, optional 

Directions

  1. Heat the oil in a large skillet over medium-high until shimmering. Add the green beans, 1/2 teaspoon salt and 1/4 cup of water. Cover and cook until the green beans are al dente, 3 minutes.
  2. Uncover, add the coriander, garlic and 1 1/4 teaspoons pepper, and toss to coat. Add the almond butter, reduce to low heat and cook, tossing frequently, until the almond butter melts and the green beans are evenly coated, 2 to 4 minutes. When the green beans are done, they should still retain a slight crunch and the spices should be very fragrant. Turn the heat off and stir in the lemon juice. Taste and adjust the salt as needed. Serve with rice, paratha or roti if desired.
