Berry Cobbler

Ingredients

Filling:

2 tablespoons unsalted butter, melted, plus additional for buttering the baking dish

5 cups mixed berries, such as raspberries, blackberries and blueberries

3/4 cup granulated sugar

3 tablespoons all-purpose flour

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/4 teaspoon kosher salt

Batter:

1/2 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon kosher salt

1 tablespoon unsalted butter, melted

1 large egg, lightly beaten

Whipped cream, for serving

Directions

  1. For the filling: Preheat the oven to 375 degrees F. Lightly grease an 8-inch square baking dish or 9-inch cast-iron skillet with butter.
  2. Put the berries in a large bowl, then add the granulated sugar, flour, cinnamon, vanilla, salt and butter and toss together until well coated. Pour into the baking dish. Set aside.
  3. For the batter: Whisk together the flour, granulated sugar, baking powder, salt, butter and egg in a bowl to form a stiff batter. Drop the batter by the spoonful over the prepared berries, then bake until golden and bubbling at the edges, about 35 minutes. Let cool slightly before serving. Serve with whipped cream.

Today I made this for Father’s Day. My dad passed away April 17th and would have loved this. My fiancé loves blackberry cobbler so I made it for him. It was a sad day missing my dad. But I powered through and made a nice meal. I haven’t tasted a cobbler this good since the times when my maw maw would make it. They had a farm and I walked there everyday in the summer. We would pick blackberries and other fruit and she would cook. Thank you, Lynn
