Ingredients
2 golden delicious apples, peeled and sliced
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
Knob of butter
50 milliliters maple syrup
For the granola:
50 grams jumbo oats
2 tablespoons coconut oil
1 tablespoon maple syrup
Pinch cinnamon
To serve:
100 milliliters (3 1/2 fluid ounces) vanilla yogurt
Directions
Special equipment:
frying pan x 2, apple corer- Heat a large frying pan over a medium heat, add the apples, toss in the sugar and fry for a minute or two tossing occasionally, followed by the cinnamon. Add the butter, toss to melt and then stir through the maple syrup.
- While the apples are cooking heat another dry frying pan over a medium high heat. Add the oats and toast for 1 minute in the pan, tossing to evenly cook the oats. Add the coconut oil, maple syrup and cinnamon, stir through and allow to cook for another minute.
- Spread the yoghurt in the base of a shallow bowl, top with the granola followed by the stewed apple and drizzle with caramel sauce from the pan.
