Caramel Apple Granola Pots

Try using pear here instead of apple or the addition of ground ginger or cardamom would work really well alongside or instead of the cinnamon. Choosing a good quality yogurt will bring this simple dish to the next level.

Ingredients

2 golden delicious apples, peeled and sliced

2 tablespoons light brown sugar

1/2 teaspoon ground cinnamon

Knob of butter

50 milliliters maple syrup

For the granola:

50 grams jumbo oats

2 tablespoons coconut oil

1 tablespoon maple syrup

Pinch cinnamon

To serve:

100 milliliters (3 1/2 fluid ounces) vanilla yogurt

frying pan x 2, apple corer
  1. Heat a large frying pan over a medium heat, add the apples, toss in the sugar and fry for a minute or two tossing occasionally, followed by the cinnamon. Add the butter, toss to melt and then stir through the maple syrup.
  2. While the apples are cooking heat another dry frying pan over a medium high heat. Add the oats and toast for 1 minute in the pan, tossing to evenly cook the oats. Add the coconut oil, maple syrup and cinnamon, stir through and allow to cook for another minute.
  3. Spread the yoghurt in the base of a shallow bowl, top with the granola followed by the stewed apple and drizzle with caramel sauce from the pan.
