Chicken Drumsticks with Broccoli Orzo

This is an all-in-one-meal that will ensure your kids eat their vegetables. The broccoli and orzo cook together, so it's impossible to eat the pasta without the broccoli. The chicken drumsticks are tossed in a kid-friendly spice mix and then baked in the oven. This will become your go-to, easy weeknight, kid-approved dinner.

Ingredients

2 tablespoons vegetable oil, plus more as needed

1/2 teaspoon garlic powder  

1/2 teaspoon onion powder 

Kosher salt and freshly ground black pepper  

8 chicken drumsticks  

2 1/4 cups chicken broth, plus more if needed 

2 cups small broccoli florets, stems finely chopped  

3/4 cup orzo  

1/3 cup freshly grated Parmesan, plus more for garnish 

Directions

  1. Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  2. Whisk together the oil, garlic powder, onion powder, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the drumsticks and toss to coat in the spice mixture. Transfer to the prepared baking sheet and roast, flipping halfway through, until the skin is crisp and golden and the drumsticks register 165 degrees F on an instant-read thermometer, 30 to 35 minutes.  
  3. Meanwhile, bring the chicken broth to a simmer in a medium saucepan over medium heat. Add the broccoli, orzo, 1/2 teaspoon salt and 1/4 teaspoon pepper. Reduce the heat to medium low and continue to cook, stirring occasionally to prevent sticking, until the orzo is al dente and the broccoli begins to get very soft, about 15 minutes. If the pan starts to look too dry, add another splash of chicken broth. Stir in the Parmesan, then use the back of a wooden spoon to slightly mash the broccoli, breaking it up into very small pieces.  
  4. Serve the drumsticks over the broccoli orzo and garnish with more Parmesan.

Quick and yummy go to meal. I am often modifying Valerie's recipes to keep my family interested cause I make them so often. That's one of the best things about all her recipes! This time, I nixed the drumsticks part, made the orzo and broc to recipe, then added a small jar of pimemtoes (drained) and leftover grilled chicken breast, sliced into strips. Just tossed them both in at the end and let it all sit until the chicken heated up. So good!!!
