Chocolate Chip Peanut Butter Bars

Ingredients

Nonstick cooking spray

One 15-ounce can chickpeas, drained and rinsed

1/2 cup all-natural peanut butter

2 tablespoons pure maple syrup

2 tablespoons honey

1 tablespoon vanilla extract

1/2 teaspoon kosher salt

1/4 teaspoon baking powder

1/4 teaspoon baking soda

Chocolate chips, as desired

Pinch of sea salt, optional

Directions

  1. Preheat the oven to 350 degrees F. Spray an 8-inch square baking dish with nonstick spray.
  2. Blend the chickpeas, peanut butter, maple syrup, honey, vanilla, salt, baking powder and baking soda in a food processor until smooth. Pour into the prepared baking dish and spread evenly.
  3. Sprinkle with desired amount of chocolate chips! (Or if you would like to mix some into the batter, go for it!) If you like a sweet-and-salty flavor, like I do, sprinkle a pinch of sea salt over the top.
  4. Bake until golden brown around the edges, about 18 minutes.
  5. Let cool, then cut into 16 squares.

These were not very good. Was hoping the peanut butter flavor would overpower the chickpea taste, but it did not. Still pretty high in calories. <br /><br />
