Ingredients
Nonstick cooking spray
One 15-ounce can chickpeas, drained and rinsed
1/2 cup all-natural peanut butter
2 tablespoons pure maple syrup
2 tablespoons honey
1 tablespoon vanilla extract
1/2 teaspoon kosher salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
Chocolate chips, as desired
Pinch of sea salt, optional
Directions
- Preheat the oven to 350 degrees F. Spray an 8-inch square baking dish with nonstick spray.
- Blend the chickpeas, peanut butter, maple syrup, honey, vanilla, salt, baking powder and baking soda in a food processor until smooth. Pour into the prepared baking dish and spread evenly.
- Sprinkle with desired amount of chocolate chips! (Or if you would like to mix some into the batter, go for it!) If you like a sweet-and-salty flavor, like I do, sprinkle a pinch of sea salt over the top.
- Bake until golden brown around the edges, about 18 minutes.
- Let cool, then cut into 16 squares.
