Toaster-Oven Pita Pizzas

Ingredients

2 pitas

1 tablespoon olive oil, optional

4 tablespoons jarred pasta sauce

2 cups shredded mozzarella

1 teaspoon dried oregano

12 small pepperoni slices

Directions

Special equipment:
toaster oven
  1. Preheat a toaster oven to 375 degrees F and position a rack in the center.
  2. Meanwhile, place the pitas on a toaster oven baking sheet. Brush the olive oil all over each pita.
  3. Spread 2 tablespoons of the pasta sauce on top of each the pita. Evenly sprinkle each surface with 1 cup of the cheese. Sprinkle each with 1/2 teaspoon of the dried oregano then arrange 6 of the pepperoni slices on each pizza.
  4. Bake until the cheese is melted and lightly browned, 5 to 7 minutes. Remove from the toaster oven and let cool for 1 to 2 minutes. Cut each pizza into 4 pieces and serve.

I had the idea & last minute looked up a recipe. These were so good! I assembled the pizzas with just sauce, cheese, pepperoni, garlic & herb salt I had on hand. Put them in the toaster oven at 375 for 6 minutes. I’ll probably try to make them crispier next time, but overall turned out great.
