Pimento Cheese

Pimento cheese is basically a cheese salad of sorts, with cheddar, store-bought mayo, and jarred pimentos. You could get upscale and take it to the park with crackers and a bottle of rosé, but I like to serve it right up on some white bread and get a little sandwich action going. That's how we do it down South.

Ingredients

2 cups sharp yellow cheddar, coarsely shredded, about 8 oz.

1 cup extra-sharp white cheddar, coarsely shredded, about 4 oz.

3 ounces jarred pimentos

2/3 cup mayonnaise

1 tablespoon chipotles in adobo, finely chopped

2 1/2 teaspoons Worcestershire sauce

1/2 lemon

3 scallions, green tops only

kosher salt

Freshly ground black pepper

Hot sauce, to taste

Sliced white bread

Directions

  1. In a large bowl, combine both Cheddars, pimentos, mayonnaise, and chipotles. Mix well. Add the Worcestershire and juice from half a lemon.
  2. Chop the green tops of the scallions, add to the cheese mixture, and mix again. Add more cheese if necessary for a balance of cheese and mayonnaise, so the mixture is nice and thick, not runny. Season with salt, pepper, a few dashes of hot sauce, and mix again. Serve the traditional way, on sliced white bread.
