Fresh lime juice and creamy egg white are the keys to this balanced, delicious Pisco Sour, a refined version of the often too-sweet South American classic.

Ingredients

1 egg white

2 ounces La Diablada pisco

3/4 ounce lime, juice

3/4 ounce simple syrup

Ice cubes

Angostura bitters

Directions

  1. Add pisco, egg white, lime juice, and syrup to a cocktail shaker. Seal with another shaker and shake vigorously to emulsify the egg whites. Add ice cubes, seal, then shake again to chill and dilute the drink. Strain into a chilled coupe. Dash bitters over the surface of the drink and serve.
