Air-Fried Okra

Ingredients

1/2 cup egg substitute

1/2 pound okra, cut into 1-inch lengths

1/2 cup panko bread crumbs

1/2 cup Italian bread crumbs

1 teaspoon salt

1 teaspoon white pepper

Directions

  1. Preheat oven to 450 degrees F.
  2. Pour egg substitute into a medium bowl. Add okra and toss to combine. In a large resealable plastic bag, combine both types of bread crumbs, salt, and pepper. Shake to combine well. Add the okra and egg substitute mixture to the bag and shake until coated.
  3. Place a wire rack on top of a cookie sheet. Arrange okra on rack and bake until crisp, about 10 minutes.

So simple to do. Would make a great garnish for other dishes such as gumbo or other Southern dishes. The only thing I changed was a little of the technique of getting them on the wire rack. Also I did not have egg substitute so used whole eggs, but that would not make a difference in the dish, only the fat. I sprayed the okra with cooking spray before baking to give it more of a crunchy exterior. These were fabulous. Next time I might add a little hot sauce to the egg to give it a little more of a kick. This time I served them as an appetizer. Even someone not a fan of okra loved it! Will definitely make this dish again.
