Glazed Baby Beets

Ingredients

20 baby beets, scrubbed

2 cups apricot juice

3 tablespoons white balsamic vinegar

2 tablespoons honey

Directions

  1. In a large saute pan, add the beets and the apricot juice. Cover and cook on medium high for 10 minutes. Add the vinegar and honey and cook for another 10 minutes. Pull off of the heat and keep covered for an additional 5 minutes.

The marinade is great, but my beets cooked for almost an hour and still weren't done.  I had to add more liquid to the pan after 40 minutes. I don't like beets, but I want to have more veggies and Alton Brown's recipes always give me the best chance of liking a food. <br />
