Ingredients

2 cups pomegranate juice, not from concentrate

2 envelopes unflavored gelatin

2 tablespoons sugar

1/2 cup pomegranate seeds

  1. Place 1/2 cup of the pomegranate juice into a medium mixing bowl and sprinkle the gelatin on top. Set aside.
  2. Place the remaining juice and the sugar into a small saucepan and place over high heat. Bring just to a boil. Remove from the heat and add to the juice and gelatin mixture, stirring to combine. Place the bowl into the refrigerator and chill, just until the mixture begins to set up, approximately 30 to 40 minutes. Remove from the refrigerator and stir in the seeds. Place into a 2 cup mold of your choice or 4 1/2 cup individual molds and chill until set.

Thought I had pomegranate juice, but I had natural black cherry juice, not from concentrate, so I used that, perfect. I even had jarred cherries to put in it, but I made only a half recipe to test it out at first, so I didn't add the cherries bc I felt it was possibly wasting more good ingredients. Now that I know it works, I will make it again with cherries mixed in. I think I might up the amt of sweetness a bit, but not a must. If you have some whipped cream, that would be a good idea too.  I have other natural juices, I might try those too. The gelatin firms up quickly. I put it in one glass bowl too.  I also have small individual silicone 'cupcake' cups that would make nice gelatin molds too. Let your imagination guide you!
