Amatriciana Sauce

Ingredients

4 ounces diced guanciale or pancetta

2 cloves garlic, minced 

1 medium onion, diced 

1 tablespoon chopped fresh oregano

1 teaspoon dried chile flakes 

Salt and pepper

Two 8-ounce cans San Marazano tomatoes, pureed 

Serving suggestions: pasta or pizza dough

Directions

  1. Add guanciale to a saucepot over medium heat and cook until slightly crispy, then add garlic, onions, oregano, chile flakes and salt and pepper and cook until translucent. Add pureed tomatoes and cook over medium-low heat for 30 minutes. Serve over pasta or spread on pizza dough and bake.
