Apple Cobbler

Ingredients

8 cups apples, peeled, cored and sliced thin (Granny Smith works great)

1/2 cup sugar

1 tablespoon lemon juice

2 ounces unsalted butter, cut into small pieces

1 cup all-purpose flour

3 tablespoons sugar

Pinch salt

2 teaspoons baking powder

2 ounces unsalted butter

8 tablespoons light cream

1 teaspoon vanilla extract

Directions

  1. Heat oven to 400 degrees
  2. Combine apples, sugar and lemon juice. Dot with butter. Set aside.
  3. Toss to mix well. Pour into 3- to 4-inch deep baking dish. Dot with butter. Set aside.
  4. Combine flour, sugar, salt and baking powder in mixing bowl. Using your fingers, cut in butter until mixture looks crumbly and butter is the size of small peas. While stirring slowly, add cream and vanilla. Mix just until batter comes together. Drop batter in mounds on top apple mixture. Drizzle top with a little additional melted butter and sprinkle with sugar. Bake 35 to 45 minutes, until golden.
