Apple Nut Bread

Ingredients

1/2 cup shredded carrots

1 1/3 cups applesauce

1/2 cup vegetable oil

1 teaspoon vanilla

2 eggs

3/4 cup granulated sugar

2 1/4 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/3 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 cup walnut pieces

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine carrots, applesauce, oil, and vanilla. Add eggs and sugar and mix together. In another bowl, mix the rest of the dry ingredients. Stir dry ingredients into applesauce mixture until blended. Do not over mix. Divide mixture into 2 greased loaf pans. Bake for 55 minutes or until done.

Over all GREAT! just as expected. I used cut up fresh red apples and put them in my Ninja blender with canola oil to make apple sauce .used half white, half wheat flour.Great with butter or even cream cheese .plus I mixed all ingredients into one bowl (dry and wet) it still came out great! . Not to dry or to moist. People just need to watch there cooking time and temperatures . I Will make this again . 37 year old (male) thanks Food network! And everyone else :)
