Shrimp and Cabbage Stir-Fry

Taking inspiration from Chinese cabbage stir-fries, this recipe pairs the underused veg with shrimp and red bell pepper and features a simple seasoning mix of garlic, red pepper flakes, rice vinegar and sugar.

Ingredients

2 tablespoons vegetable oil

1 red bell pepper, thinly sliced

1 clove garlic, minced

1 teaspoon red pepper flakes

12 large shrimp, peeled and deveined

3 cups thinly sliced green cabbage

1/2 cup chicken stock

2 tablespoons rice vinegar

1 teaspoon sugar

salt & pepper

3 cups cooked white rice

Directions

  1. Heat oil in a large skillet over medium high heat and stir in sliced red peppers, garlic and red pepper flakes. Stir and cook for 2 minutes. Add shrimp and cook for 1 minute. Stir in cabbage and cook for 1 minute. Add stock, vinegar, sugar and season with salt and pepper. Cover and steam for 5 minutes. Serve hot over white rice.
