Asian Noodle and Smoked Chicken Salad

Ingredients

1 pound cooked smoked chicken, cut into strips

10 ounces thin chinese egg noodles or spaghettini

1 tablespoon oriental sesame oil

1/4 pound snow peas, trimmed

1 cup thinly sliced carrot

1 cup thinly sliced cucumber

1 cup thinly sliced scallion

1 can (15 oz) baby corn, drained and rinsed

1 tablespoon toasted sesame seeds

1 recipe peanut sauce (recipe follows)

Directions

  1. In a large saucepan of boiling, salted water add the noodles, and cook them until they are just al dente. Drain them in a colander, rinse them under running water, and drain them well. In a bowl toss the noodles with the sesame oil and chicken.
  2. In a saucepan of boiling water blanch the snow peas for 30 seconds, drain and refresh them under running cold water. Transfer the noodle mixture to a serving platter and garnish with snow peas, carrots, cucumber, scallion and corn. Sprinkle with toasted sesame seeds. Serve the salad with the peanut sauce.

Salad recipe says “ peanut sauce recipe follows”…,,,but it’s nowhere to be found 🤷🏼‍♀️I feel like that’s pretty key.
