Bacalaitos (Codfish Fritters)

Ingredients

1/2 pound salted cod, soaked overnight in 3 cups of milk

4 1/2 cups water

3 cups milk

1 1/2 cups flour

1 teaspoon baking powder

1 small onion, 1/2-inch dice

1 small sweet red pepper, 1/2-inch dice

2 cloves garlic, crushed

1/2 bunch cilantro, chopped

Oil, for frying

Directions

  1. Drain salted cod. Boil fish in 3 cups of the water and the milk until tender, about 20 to 30 minutes. Remove cooked fish from liquid, shred and set aside to cool. Make a batter with the flour, baking powder and remaining water. Add cod, onions, peppers, garlic and cilantro. Deep fry spoonfuls of the batter in oil heated to 350 degrees until golden.
