Baked Dill Garlic Salmon

Ingredients

fresh tarragon and dill sprigs, as needed

1 whole salmon, 12 inches long 

crushed garlic, as needed

1 lemon, sliced

juice of 2 lemons

Directions

  1. Marinate the salmon in lemon juice for one hour to remove smell. Don't marinate overnight since lemon cooks fish. Stuff the center of the fish with fresh dill, tarragon, crushed garlic and round lemon slices. Bake in clay or glass dish for 45 minutes at 350 degrees F.

I made it without the whole lemon but with extra lemon juice and a LOT of dill and tarragon. I also left the skin on while baking, which I recommend so that it doesn't fall apart. Very tasty, and the fresh herbs give it a little extra "pop" of spring.
