Berries and Cream Floats

Ingredients

1 cup cold heavy cream

2 tablespoons confectioners' sugar

1 teaspoon vanilla bean paste (or seeds from 1 vanilla bean)

1 cup mixed berries

2 pints vanilla ice cream

1 1-liter bottle red cream soda

Directions

  1. Make the vanilla whipped cream: Whisk the heavy cream, confectioners' sugar and vanilla bean paste in a large bowl until stiff peaks form.
  2. Alternate the berries and 2 scoops ice cream in each of 4 glasses. Pour in the soda, then top each glass with a large dollop of vanilla whipped cream.

This dessert was PRETTY tasty! I didn't have access to red cream soda so I just used good ol' Sioux City Cream Soda. The whipped cream was my families favorite part...You MUST try it!
