Billy Bowman's BBQ Ribs

Ingredients

2 cans pineapple juice

1 can frozen orange juice, from concentrate

1 cup honey

6 slabs ribs

Everglades Seasoning*

* Can be found at most supermarkets.

Directions

  1. Mix the pineapple juice, orange juice, and honey in a large container. Marinate the ribs in this mixture for 6 hours.
  2. Sprinkle the ribs heavily with Everglades Seasoning. Smoke the ribs over indirect heat for 2 to 3 hours.

Cook’s Note

The ribs should not cook over direct heat because drippings could spark a fire and overcook the ribs. The coals should be to 1 side of the grill, the ribs to the other side. Billy Bowman prefers wet wood chips to give a smoked flavor.

I tried this recipe with a small twist, added onions in the marinade and Dupree Rib Rub since that's what I had on hand. Turned out great! Cooked ribs for 2.5 hrs on 200 degree grill. Last 10 min basted ribs with Sweet and Spicy Chipotle Barbecue Sauce.
