Blackened Salmon Hushpuppies

Ingredients

4 eggs

2 cups onion, grated

1 1/3 tablespoons lemon juice

1 1/2 teaspoons black pepper

4 tablespoons parsley chopped

1/2 cup milk

1 1/2 teaspoons salt

1 1/2 cups jalapenos, chopped

8 cups rice

3 pieces blackened salmon

6 eggs beaten

Flour, for coating

Bread crumbs, for coating

Oil, for frying

Directions

  1. Beat 4 eggs, add all ingredients except salmon, eggs, and flour. Flake salmon with fork and mix into rice mixture.
  2. Using the ice cream scoop, form into balls, and dip in flour, dip in egg dip into bread crumbs and let stand for 30 minutes before deep frying in 375 degree F oil.
  3. Drain on paper towels and serve hot.

The hushpuppies were very bland needing more seasoning especially salt. The recipes calls for 3 pieces of salmon so how many ounces is that? I made well over 40 - 1/4 cup size balls which is way more than any four people I know would eat. The prep time is way under estimated.
