Crostini with Blue Cheese and Quince Paste

During the holidays, there’s a tendency for impromptu gatherings at my house. Crostini are one of my go-tos — they’re so simple and they pair well with cocktails or wine.

Ingredients

1 baguette, sliced a scant 1/2 inch thick on the diagonal

Extra-virgin olive oil, for brushing

Kosher salt

8 ounces Cabrales blue cheese

1 block quince paste, thinly sliced

Cracked black pepper

Directions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Grill the bread until toasted on both sides, about 2 minutes (the bread should be crisp but still tender on the inside, not brittle). Brush the tops with olive oil and season with salt.
  3. Top each bread slice with a thin slice of cheese and some quince paste. Season with cracked black pepper.
