Pomegranate-Ginger Spritzer

Ingredients

Grenadine Syrup:

1 cup unsweetened pomegranate juice

1/2 cup plus 1 tablespoon granulated sugar 

1 teaspoon fresh lemon juice 

Spritzer:

1 ounce white tequila

1/2 ounce orange liqueur 

Juice of 1 lime plus 1 lime slice, for serving

1/2 cup good-quality ginger ale 

Directions

  1. For the grenadine syrup: In a small saucepan over medium heat, stir together the pomegranate juice and sugar. Bring to a simmer and cook, stirring occasionally, until thick enough to coat the back of a spoon, about 25 minutes. Remove from the heat and stir in the lemon juice. Let cool. (Makes about 3/4 cup; extra syrup can be stored in an airtight jar in the refrigerator for up to 2 weeks.)
  2. For the spritzer: Add the tequila, orange liqueur, lime juice and 2 tablespoons grenadine syrup in a rocks glass and mix until combined. Fill with crushed ice. Add the ginger ale, drop in a lime slice and serve.

Faster, simpler, tastier version: 2 parts ginger liqueur, 1 part pomegranate juice, 1 part lime juice, 2 parts ginger ale. Serve over ice  in a tumbler or high ball, or shake everything save the ginger ale and pour over the ginger ale in a martini glass. Mint and lime garnish if you fancy
