Boss Burger with Rib Candy and Spicy Carolina Sauce

Ingredients
Burger:
2 pounds ground brisket or sirloin
2 pounds ground chuck
2 tablespoons Worcestershire sauce
2 teaspoons ground black pepper
1 teaspoon salt
1 teaspoon liquid smoke
Rib Candy:
1 cup brown sugar
1/4 cup honey
1/4 cup sweet barbecue sauce
2 racks fully cooked and chilled ribs
Vinegar-based barbecue sauce, for serving
8 to 10 buttered buns, for serving
Directions
- For the burger: Mix together the beef, Worcestershire, pepper, salt and liquid smoke in a bowl. Roll into half-pound patties and grill to the desired temperature.
- For the rib candy: Preheat the oven to 350 degrees F.
- Mix the brown sugar, honey and barbecue sauce in a bowl and set aside.
- Cut all meat off the bones from the ribs, then cut into cubes and add to the sauce. Stir well until all the meat is coated. Spread on a baking sheet and bake for 20 minutes.
- Top the patties with the rib candy and a vinegar-based barbecue sauce on buttered buns.
Cook’s Note
For the best rib candy, use smoked racks of ribs.
