Chocolate Fanfare Tart

Ingredients

Crust:

1 1/2 cups flour

3 tablespoons brown sugar

2 ounces chocolate chips or pieces

8 tablespoons unsalted butter, cold and cubed

2 to 3 tablespoons milk, to form a dough

Filling:

1/2 cup unsalted butter, melted and hot

1 cup chocolate chips or pieces

1 1/2 cups sugar

3 whole eggs

1 tablespoon orange liqueur

3/4 cup flour

1 tablespoon grated orange zest

Topping

1 cup heavy cream, boiling

2 cups chocolate pieces

Whipped cream and berries, for garnish

Directions

  1. Preheat the oven to 375 degrees F.
  2. For the crust: process flour, sugar, and chocolate in food processor. Add rest of ingredients. Press into a lightly greased 11-inch tart pan with removable bottom. Bake until firm, about 15 to 20 minutes.
  3. Lower the oven to 350 degrees F.
  4. For the Filling: pour the hot butter over the chocolate and stir until melted and smooth. In a mixer, beat the sugar and eggs together. Add the orange liqueur, flour, and zest. Add chocolate butter mixture. Pour into tart shell. Bake for 35 minutes, or until cooked through, but not overcooked. When cooled, spread with topping.
  5. For the topping: pour the boiling cream over the chocolate. Stir until smooth. Spread over cooled tart. Refrigerate until firm. Serve slightly warmed with whipped cream and berries.

The three layers give it a very pretty look. To me the bottom layer is similar to a chocolate chip cookie. The second time I made it I cut way back on the amount of crust - I liked it better this way. I used Orange extract one time and the other time Orange oil - to me the orange oil gives it a stronger orange flavor than the extract. Its a hit!
