Ingredients

1 box chocolate cake mix

Cinnamon Ganache:

1 cup heavy cream

5 ounces dark chocolate, chopped

1 teaspoon ground cinnamon

Toffee, Apples and Brandy:

1 1/2 cups brown sugar

1 cup heavy cream

1/4 cup brandy

2 apples, peeled, pitted and diced

Ice Cream, any flavor your desire

Whipped Cream, for topping

Dark, milk and white chocolate chunks, for decorating

Directions

  1. For the cake: Prepare cake mix according to directions on box and bake in a 10-inch ring pan. Allow to cool in pan.
  2. Cinnamon Ganache: Boil cream and remove from the heat. Place the chocolate pieces into a bowl and pour cream over the chocolate and mix until a smooth texture is obtained. Add cinnamon and combine. Keep warm.
  3. Toffee Apples and Brandy
  4. Melt sugar to a light brown caramel on high fire. Slowly pour in the cream while stirring constantly. When all caramel melted, remove pan from the heat and add the brandy and apples. Lower the flame, cook for about 5 minutes and then allow time for it to cool down
  5. Assembling "The Mess"
  6. Place pan on a platter or remove cake from pan.
  7. Pour the ganache on top of cake until it is nearly covered.
  8. Pour the toffee mixture on top the cake. Include 3 scoops of ice cream on the center of the cake. Put whipped cream around the cake. Decorate with dark, milk and white chocolate chunks. Serve with spatulas and let people eat straight from the pan to make them fulfill all their childhood desires that were always forbidden!!

This was so very easy and tasted better then I thought it would! I love Paula to pieces!!! And for those of you that are griping about the finger licking, here is MY 2 cents!!! As long as Paula is NOT cooking for YOU, and you are not parking your hind end at HER table.....then it has no bearings on you. If she wants to lick her country fingers, then God bless her and her magic fingers that have brought us all so many great recipes and hours of giggles! LOVE YOU PAULA!!! You are finger lickin' good, don't you dare step away from who you are!!
