Chow Down Casserole

Ingredients

1 pound hamburger

1 tablespoon minced garlic

2 cups quick rice

1/2 cup diced carrots

1/2 cup diced tomato

1 egg

2 tablespoons oil

1/4 cup Parmesan cheese

Directions

  1. Preheat oven to 350 degrees.
  2. In a saucepan, bring 3 cups of water to a boil, then add hamburger and garlic. Boil for 20 minutes. Drain and set aside.
  3. In another saucepan, bring 3 cups of water to a boil and add the rice and carrots. Turn heat down and simmer for 10 minutes. Remove from heat, drain and set aside to cool.
  4. Next, mix tomato and egg together with cooled rice and carrots, hamburger and garlic and spread in a 9 by 13-inch casserole dish that has been sprayed with non-stick spray.
  5. Sprinkle top with Parmesan cheese and bake 20 to 25 minutes or until golden brown.
