Pickled Fall Vegetables
Pickling is an easy way to celebrate the best of seasonal produce. This assortment of fall vegetables, including carrots, cauliflower and beets, is steeped in a sweet-and-tangy brine made with cider vinegar, fresh ginger, mustard seeds and turmeric. Colorful, bright and crunchy, these pickles are the perfect accompaniment to the rich roasts and hearty stews of the season.
Danielle's Best Carrot Cake
This carrot cake is one of my family’s all-time favorite bakes, and for good reason! Buttermilk and crushed pineapple keep every bite incredibly moist while adding a subtle brightness that balances the rich flavors. Warm spices like cinnamon, nutmeg, and ginger give this cake the cozy, nostalgic flavor you expect from a classic carrot cake. It’s almost a cross between a carrot cake and a coconut cake, thanks to the shredded coconut and chopped nuts folded into the batter. They add wonderful texture and a buttery nuttiness that perfectly complements the sweet, earthy carrots. The frosting is everything you want in a classic cream cheese frosting-rich, creamy, and perfectly tangy, but mascarpone lightens it with its silky texture, while a squeeze of fresh lemon juice adds just the right amount of brightness. For an extra special finish, coat the outside of the cake with sweetened shredded coconut, chopped pecans, or a combination of both for a beautiful presentation and even more texture.
Air Fryer Turkey and Veggie Meatball Skewers
These turkey meatballs are weeknight magic: juicy, flavorful and packed with shredded zucchini and carrot for extra moisture and a quiet veggie boost. Plus, they’re easy for kids to help prepare. Warm cumin and Parmesan give them savory depth, while a quick spin in the air fryer keeps things light and hands-off. Threaded onto skewers (because it’s more fun that way!) and paired with crispy veggie tots that cook in the same amount of time, this is the kind of dinner that feels playful but is totally practical.
