Coca-Cola Cake

Ingredients

Cola Cake:

1 cup butter, plus more for the pan

2 cups all-purpose flour, plus more for the pan

2 cups granulated sugar

2 tablespoons cocoa powder

1 cup cola soft drink, such as Coca-Cola

1/2 cup buttermilk

1 teaspoon baking soda

2 eggs, lightly beaten

1 tablespoon pure vanilla extract

1 1/2 cups miniature marshmallows

Chocolate Cola Icing:

1/2 cup butter

3 tablespoons cocoa powder

6 tablespoons cola soft drink, such as Coca-Cola

One 16-ounce package confectioners’ sugar, sifted

1/2 teaspoon vanilla extract

Directions

  1. For the cola cake: Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-inch pan.
  2. Sift flour and granulated sugar in a bowl. Heat butter, cocoa powder and cola to a boiling point in a small pan. Pour over flour/sugar mixture. Add buttermilk, baking soda, eggs, vanilla and marshmallows (the batter will be thin and the marshmallows will float to the top). Pour batter into prepared pan. Bake until cake is cooked, 30 to 35 minutes.
  3. For the chocolate cola icing: Combine butter, cocoa, cola, confectioners' sugar and vanilla in a pan and heat until it comes to a boil.
  4. Poke holes in the cake while it's still hot and pour the icing over the cake. Cut into squares and serve warm from the cake pan.

I just made a 1/2 batch of this and made it in to 12 muffins. <br /><br />Absolutely delicious. <br /><br />The original recipe has far too much sugar for my taste so I used monk fruit sweetener and coke “no sugar” for the cake mix. <br /><br />Also a high starch gluten free flour blend. My family absolutely loved them. <br /><br />5 stars because it was amazing. Even with my substitutions.
