Coconut Almond Meringues

Ingredients

1/2 cup almond flour

1/2 cup powdered sugar

1/4 cup coconut flakes

2 tablespoons flour

4 egg whites

3 tablespoons sugar

Directions

  1. Preheat the oven to 350 degrees F.
  2. In a mixing bowl, combine almond flour, powdered sugar, coconut flakes, and flour.
  3. In another mixing bowl, whip the egg whites to soft peaks and add the sugar. Whip to medium peaks. Gently fold in the dry ingredients.
  4. Spoon the mixture into a pastry bag set with plain tip. Pipe into rings on a parchment-lined baking sheet, and bake until golden brown, about 15 minutes.

These weren't all that great. I could have done something wrong but I followed the instructions exactly. They turned out soft but not nice and chewy like meringues. Not much flavor at all. I thought about putting almond flavoring in but I didn't. I used the pastry bag but the batter was too soft to hold the shape. I also didn't know when to remove from parchment paper. I slid the paper (and cookies) off the sheet as soon as they came out of the oven &amp; removed them from the paper when they were cool. <br /> <br />I also used fresh, unsweetened flaked coconut from the health food store. Maybe sweetened coconut would improve them. I won't bake these again.
