Ingredients
8 ripe tomatoes, quartered
1/2 purple onion, chopped
1 clove garlic, crushed
Splash water
Salt
Extra-virgin olive oil
Freshly squeezed lemon juice
Directions
- In a large salad bowl, crush the tomatoes with a wooden spoon and add the onion, garlic, and water. Season with salt, extra-virgin olive oil, and lemon juice. Toss well and serve.
