Corn with Chile Lime Butter

Ingredients

1/2 pound unsalted butter, softened

1 tablespoon minced garlic

2 limes, juiced

2 tablespoons chopped cilantro

2 tablespoons rocoto chile paste

1 teaspoon ground cumin

Salt and pepper

4 ears fresh corn

Directions

  1. Preheat grill on high.
  2. In medium mixing bowl, combine the butter, the juice of the 2 limes, cilantro, chile paste, and cumin. Season with salt and pepper. Mix well and set aside.
  3. Peel the ears of corn and on the hot grill, grill the corn until charred nicely on the outside. Serve with a spoonful the flavored butter on top.

This recipe was awesome! The market I went to didn't have the right chili paste, so I got Sambal Oelek in the Asian section. They didn't have the Cotija cheese either, so didn't use cheese at all. The corn with this butter was amazing! My mouth is watering thinking about it!
