Cucumber Yogurt Sauce

Ingredients

2 cups yogurt

1 cucumber, peeled, seeded and chopped

1 shallot, minced

1 tablespoon parsley, minced

1 tablespoon finely chopped mint

1/2 teaspoon cumin, ground

1 tablespoon olive oil

1 large pinch salt

Ground white pepper, to taste

Directions

  1. Drain the yogurt in a cheesecloth-lined strainer set over a bowl for 1 hour.
  2. In a bowl, combine all ingredients. Serve as a salad dressing or as an accompaniment with spicy foods, such as vegetable curry.
