Pepper Jack Mashed Potatoes

Ingredients

3 large russet potatoes, peeled and coarsely diced (about 2 pounds or 5 cups total)

Kosher salt 

2/3 cup sour cream 

4 ounces cream cheese 

4 ounces pepper Jack cheese, grated 

Coarsely ground black pepper 

1/2 bunch green onions, greens sliced 

Directions

  1. Place the potatoes in a large saucepan set over medium-high heat, then cover with cold water and season with salt. Bring to a boil and cook until the potatoes are tender, 10 minutes. Drain and place the potatoes in the bowl of a stand mixer fitted with the paddle attachment. Add the sour cream, cream cheese, pepper Jack and some salt and pepper, and mix until fluffy. Taste and adjust the seasoning as needed. Fold in the green onions and enjoy!

My family really enjoyed the extra zip in these potatoes from the pepper jack cheese and the green onions. At first I left the green onions out so that each person could add them or not, but we all agreed that they definitely added flavor to the dish. The potatoes turned out wonderfully creamy and did not require anything additional (unlike another reviewer). I will definitely make these again!
