Roasted Green Beans

Ingredients

1 pound fresh green beans, trimmed

3 tablespoons capers 

3 tablespoons chopped pecans 

2 tablespoons panko breadcrumbs 

2 tablespoons coconut oil 

2 tablespoons grated Parmesan

1 tablespoon grated lemon zest 

1 large shallot, cut into julienne 

Kosher salt 

Directions

  1. Preheat the oven to 400 degrees F.
  2. Combine the green beans, capers, pecans, breadcrumbs, coconut oil, Parmesan, lemon zest, shallots and 1/2 teaspoon salt in a large bowl; toss to coat. Pour onto a baking sheet and spread into an even layer.
  3. Bake for 8 minutes. Stir and continue to bake until the beans are just tender and the skins are golden and blistery, about 8 minutes more.
  4. Serve immediately.

These are my all time favorite green beans. Adjust baking time accordingly to size of green beans. I like mine crunchy and so have all my guests that rave about them. If you like southern style. Do some bacon on a sheet pan in the oven and use the bacon fat instead of coconut oil and crumble over finished dish before serving. Recipe as written is fabulous.
