Watermelon with Sweet Balsamic Syrup and Fresh Mint

Ingredients

1/2 cup good balsamic vinegar

1/4 cup sugar

1/4 cup water

1/2 large watermelon

6 fresh mint leaves, julienned

Directions

  1. Combine balsamic, sugar and water in saucepan. Heat over medium-high heat and reduce slightly until syrup consistency, about 12 minutes. Cool to room temperature.
  2. Cut up watermelon in wedges. Drizzle cooled balsamic syrup over watermelon. Garnish with mint.

Wow. These flavors melded so well together. I mixed it all together and packed it along in my basket. This works as a great desert for a picnic. My boyfriend could not get enough! The mint is so refreshing and is a great prelude to a sweet summer kiss.
