Ingredients
For the crispy caramelized bananas:
1 banana, thinly sliced
Juice of 1 lemon
2 tablespoons butter, melted
2 tablespoons sugar
For the cookies:
1 cup peanut butter
1/2 cup honey
1 cup flour
1 cup chocolate, coarsely chopped
Directions
- Preheat the oven to 350 degree F.
- For the bananas: Mix the bananas in a bowl. Squeeze the lemon juice on them to ensure they don't brown. On a parchment paper-lined baking tray, brush 1 tablespoon melted butter. Sprinkle 1 tablespoon sugar and lay out the banana slices. Brush the slices with remaining butter and sprinkle with remaining sugar. Bake for about 1/2 hour until the bananas are golden brown. Set aside.
- For the cookies: In a medium bowl, stir together the peanut butter and honey. Mix in the flour, then the caramelized bananas and chocolate. Line a baking sheet with parchment paper. Drop tablespoon-size clusters on the baking sheet. Bake for 20 minutes, or until golden brown.
Cook’s Note
For dog cookies, omit the banana chips and chocolate.
