Duck Confit

Ingredients

4 duck legs

Duck fat- enough to cover legs entirely in roasting pan

Thyme

Rosemary

2 tablespoons garlic, chopped

Salt and pepper, to taste

Directions

  1. Preheat oven: 300 degrees Season legs with herbs, garlic, salt and pepper. Place into roasting pan and cover completely with duck fat. Roast 2 1/2 hours. Remove legs from fat and place back in oven long enough to crisp skin.
