ClassyMum

I have always loved Ellie’s wonderful recipes. In fact, I have 4 of her cookbooks and I use them regularly. This recipe is from her cookbook So Easy and it’s so quick, easy and summery. I use frozen mangoes and throw in a few peaches for extra sweetness and I use Triple Sec if I don’t have Cointreau on hand. I also make my own Angel Food Cake because I think the store-bought ones taste rubbery. However, you choose to make this however, it’s a beautiful elegant dessert for any occasion! :)
