This is an old family favourite. I like to add the 'snowballs' to a cookie tin, for something...just a bit different. Because I was working with dried dates, I chopped in my Magic Bullet, then added water and steamed for 5 seconds/half cup in the microwave. 1 cup of dried dates equals 12 walnut sized balls. I used pecans (chopped in the bullet), and added 1 cup of rice krispies - for the crunch factor. Tip #1: Run your hands under cold water before rolling. Repeat as needed. Tip 2: roll in coconut first, then the icing sugar. Cool in the fridge. My neighbours are vegan, and helped look after my Mom when I took off for a day's road trip. This, will be my gift to them. One big Christmas cup of sweet love. <3
