Apple-Oat Cookies

Ingredients

2 1/4 cups all-purpose flour

1 cup old-fashioned oats

1 teaspoon ground cinnamon

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon ground allspice

1 1/2 sticks unsalted butter, melted and cooled slightly

1/2 cup packed light brown sugar

1/2 cup granulated sugar

2 large eggs

1 Fuji or Gala apple, coarsely grated

2 teaspoons pure vanilla extract

1 cup confectioners' sugar

2 tablespoons milk

Directions

  1. Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, oats, cinnamon, baking powder, baking soda, salt and allspice in a medium bowl. Combine the butter, brown sugar, granulated sugar and eggs in a separate bowl; whisk until smooth. Stir in the grated apple and vanilla, then stir in the flour mixture until just combined.
  2. Scoop heaping tablespoonfuls of the dough onto the prepared baking sheets, about 1 inch apart. Bake until just set around the edges, 10 to 12 minutes, switching the baking sheets halfway through. Let cool 5 minutes on the baking sheets, then transfer to a rack to cool completely.
  3. Make the glaze: Whisk the confectioners' sugar and milk in a bowl; drizzle on the cookies.

Okay, not great. Mine were pretty dry. I did use part whole wheat flour (ran out of AP) but added some water to try to compensate. Also lacked flavor. I wish I had not cut back on the sugar (just a little), as some had suggested. <br />I did the glaze (added a little cream cheese to it), which worked fine. <br />They just did not have much flavor.
