Blender Pico de Gallo

This classic Mexican condiment is even easier to make when you can mix up all the ingredients in a blender. Be sure to stop blending before everything is completely smooth; you’ll want a few chunky pieces!

Ingredients

4 medium tomatoes, cored, seeded and chopped

1/2 cup packed fresh cilantro (leaves and thin stems only)

1 jalapeno, seeded and chopped

1/2 small white onion, chopped

Juice of 1 lime (about 2 tablespoons)

Kosher salt

Directions

  1. Combine the tomatoes, cilantro, jalapeno, onion, lime juice and 1 teaspoon salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary.
