Ingredients
8 ounces shishito peppers, rinsed and patted completely dry
1 tablespoon vegetable oil
Flaky salt and lemon juice, for sprinkling
Directions
- Heat a large cast-iron skillet over high heat. Toss the shishitos with the vegetable oil.
- Add the shishitos to the skillet in one layer. Set a second skillet on top to weigh down the peppers; cook until blistered, about 2 minutes. Toss, then continue cooking with the skillet on top until blistered and slightly wilted, 2 to 3 minutes. Sprinkle with flaky salt and lemon juice.
