Ingredients

3 large Roma tomatoes

1/4 white onion, peeled

1 jalapeno

1 small clove garlic

1 lime

Kosher salt

2 tablespoons cilantro leaves, chopped

Tortilla chips, for serving

Directions

  1. Place a box grater inside of a large bowl. Grate the tomatoes on the large holes of the box grater. Pour off any tomato water that accumulates in the bowl. Holding the layers of the onion together, grate the onion on the large holes of the box grater.
  2. Grate half of the jalapeno on the second smallest holes of the box grater, scraping out and discarding the seeds as you go. Grate the garlic on the second smallest holes.
  3. Zest the lime into the salsa by grating the peel on the second smallest holes. Slice the lime in half and squeeze the juice into the salsa. Season the salsa with salt.
  4. Stir the cilantro leaves into the salsa and serve with tortilla chips.
