Chipotle-Spiced Cashews and Pecans with Pretzels

Ingredients

Kosher salt

1 tablespoon sugar

2 to 3 teaspoons chipotle chile powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon grated lime zest

1/4 teaspoon granulated garlic

Vegetable oil, for brushing

1 large egg white

2 cups raw unsalted cashews

2 cups raw unsalted pecans

1 1/2 cups mini pretzels

Directions

  1. Mix 1 1/2 teaspoons salt, the sugar, chile powder, cumin, coriander, lime zest and garlic in a small bowl; set aside.
  2. Preheat the oven to 350 degrees F and brush a rimmed baking sheet lightly with vegetable oil. Whisk the egg white in a large bowl until frothy. Add the cashews, pecans and mini pretzels. Sprinkle with the prepared spice blend and toss to coat. Spread the nut mixture evenly on the baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes; let cool on the baking sheet.

This is a good recipe to start with. I started with 2 tsp of Chipotle powder and the rest of the spices as listed in the recipe. After tasting the spice mixture I knew it would be too spicy for the group I would be serving it to. So I added a packed tsp of light brown sugar, another 1/8  tsp of granulated garlic, another 1/2 tsp of Cumin, and another 1/2 tsp of Coriander. This made the heat just right for our tastes. I baked it for 20 min stirring 3 times- any longer it would burn - watch carefully. I felt the lime zest got lost - I could only taste it on the cashews. It could have been a little bit sweeter - maybe next time I'll use 2 TBSP Light Brown Sugar and maybe another 1/2-1 tsp more Lime Zest. It has a good smoky flavor. I think it needs more Mini Pretzels. All of the pretzels were gone after about a half batch was eaten - I have about 2 - 3  cups of just nuts. Maybe I will use 2 or maybe 3 cups of Mini Pretzels next time (may have to use more egg whites and add more spices). All in all it it's  a good mix of flavors and the spice (heat) level can be dialed up or down. But I still think it needs another element - maybe something sweet and tangy like dried cherries or cranberries (I wouldn't increase the sugar then) added after the baking. I will make again and play around with this recipe depending on who I''ll be serving it to.
