Tangy yogurt and lemon make this cucumber salad with dill and mint completely refreshing.

Ingredients

1/2 cup plain yogurt

1 small clove garlic, finely grated

Finely grated zest and juice of 1 lemon

Kosher salt and freshly ground black pepper

3 small cucumbers, such as Kirby, chopped

1 shallot, chopped (about 1/2 cup)

1/4 cup fresh dill, coarsely chopped, plus more, for serving

1/4 cup fresh mint leaves, coarsely chopped, plus more, for serving

Directions

  1. Stir together the yogurt, garlic, lemon zest and juice, 1 teaspoon salt and a few grinds of pepper in a medium bowl until combined. Add the cucumbers, shallot, dill and mint; stir until the cucumbers are well coated. Serve sprinkled with dill and mint.

Nice blend of flavors. Especially appreciated the minced shallots, as so many cucumber salads use more obvious representations of the onion element. My only reservation is the amount of lemon juice and yogurt, resulting in a fairly wet dish.
