Eggnog Cookie Bars

Ingredients

Nonstick cooking spray

2 1/2 cups all-purpose flour

3/4 teaspoon freshly grated nutmeg, plus more for topping 

1/2 teaspoon fine salt 

2 1/2 sticks unsalted butter, melted 

1 3/4 cups granulated sugar 

2 large eggs plus 3 egg yolks

2 tablespoons brandy

1 tablespoon pure vanilla extract

Confectioners' sugar, for dusting

Directions

  1. Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on 2 sides; coat with cooking spray.
  2. Whisk the flour, nutmeg and salt in a medium bowl. Whisk the melted butter, granulated sugar, eggs, egg yolks, brandy and vanilla in a large bowl until smooth. Whisk in the flour mixture until smooth. Spread the batter in the prepared baking dish. Bake until the top is shiny and slightly cracked, about 40 minutes. Let cool completely in the pan.
  3. Lift the bars out of the pan using the foil overhang; dust with confectioners' sugar and sprinkle with nutmeg. Slice into 1 1/2-inch squares.

They’re not bad. They’re not good. I followed the directions and wound up with a cookie/cake with more of a shortbread flavor than egg nog. I made some salted caramel sauce to drizzle over them. Helped a lot.
